Ingredients
  

  • 2 large English cucumbers thinly sliced with peel left on
  • 1 tablespoon kosher salt used for drawing out excess moisture
  • ½ red onion sliced very thin for mild bite
  • 2 green onions finely sliced, both white and green parts
  • 3 tablespoons fresh dill chopped, loosely packed
  • tablespoons champagne vinegar or white wine vinegar for similar acidity
  • 2 teaspoons honey liquid and mild-flavored
  • Freshly ground black pepper added to taste at the end

Method
 

  1. Place the cucumber slices into a colander and sprinkle evenly with salt, tossing gently to coat.

  2. Set the colander over a sink or plate and let the cucumbers release liquid for 20 minutes, then rinse thoroughly under cold water and drain well.
  3. Transfer the drained cucumbers to a large bowl and add the red onion, green onion, and chopped dill.

  4. In a small bowl, stir the vinegar and honey together until fully blended.

  5. Pour the dressing over the cucumber mixture and toss gently until evenly coated.
  6. Finish with freshly ground black pepper and extra dill if desired, then serve immediately or chill briefly.
