Ingredients
  

  • 1 ½ pounds carrots fresh, young carrots preferred
  • 1 knob ginger approximately 3oz, peeled
  • 3 cups water for blending
  • ½ to ¾ cup milk whole or your preferred type, optional
  • ½ teaspoon nutmeg for flavor
  • 1 teaspoon vanilla extract or mixed essence, optional
  • Sugar or condensed milk to taste, optional
  • Optional add-ins:
  • Squeeze of lemon or lime juice for brightness
  • Apple orange, or celery (for extra flavor)
  • Guinness Stout or dark rum for a grown-up twist, optional

Method
 

  1. Wash, peel, and roughly chop the carrots and ginger.

  2. Add the carrots, ginger, and water to a high-speed blender. Start on low, then increase speed until smooth.
  3. Pour the blended mixture through a fine strainer or cheesecloth into a large bowl. Press or squeeze to extract as much liquid as possible. Discard the pulp or save for baking or soups.

  4. Sweeten to taste with sugar or your preferred sweetener.
  5. Return the strained juice to the blender. Add condensed milk, vanilla, and nutmeg. Blend again until smooth and creamy.
  6. Pour into a jug or bottle and refrigerate until cold. Serve chilled or over ice cubes, with a sprinkle of nutmeg or cinnamon on top.
