Ingredients
  

  • 1 teaspoon olive oil used for sautéing to prevent sticking
  • 1–2 jalapeño peppers finely chopped (adjust quantity based on heat preference)
  • 10 ounces boneless chicken breast or thighs diced small (bite-size for even cooking)
  • 1 teaspoon taco seasoning adds mild spice and depth
  • 1 teaspoon garlic powder for savory balance
  • 1 tablespoon red chili flakes optional for extra heat
  • ½ cup chicken broth or beer used to steam and tenderize the chicken
  • 8 ounces cream cheese softened for smooth melting
  • 8 ounces blue cheese dressing can substitute ranch or thick sour cream
  • ½ cup buffalo-style hot sauce use more or less to taste
  • 4 ounces shredded cheddar cheese freshly shredded melts best
  • ½ cup crumbled blue cheese adds sharpness and texture
  • Salt and black pepper to taste (season gradually)

Method
 

  1. Warm a large skillet over medium heat and coat with olive oil, then add the chopped jalapeños and cook until softened and fragrant, about 5 minutes.

  2. Add the diced chicken along with taco seasoning, garlic powder, and chili flakes, stirring frequently until the chicken is lightly browned on all sides.
  3. Pour in the chicken broth or beer, reduce the heat, cover the skillet, and let the mixture simmer until the chicken is fully cooked and tender, about 5 minutes.

  4. Lower the heat and stir in the cream cheese, blue cheese dressing, and buffalo sauce, mixing until completely smooth and evenly combined.

  5. Transfer the mixture to a baking dish, scatter the shredded cheddar and crumbled blue cheese over the top, then bake at 350°F until hot and bubbling, about 10 minutes.
