Ingredients
  

  • 3 cups kale finely chopped, massaged lightly
  • 2 cups pomegranate arils from 1 large pomegranate
  • 1 apple diced
  • 1 small cucumber diced
  • 1 15 ounce can garbanzo beans (drained and rinsed)
  • 4 ounces goat cheese crumbled
  • ½ cup walnuts chopped
  • Salt and black pepper to taste
For the dressing:
  • ¼ cup olive oil extra virgin recommended
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard

Method
 

  1. Place kale, pomegranate arils, apple, cucumber, and garbanzo beans in a medium bowl. Toss to combine and season with salt and pepper.
  2. In a small bowl or jar, combine olive oil, lemon juice, honey, and Dijon mustard. Whisk or shake until well blended.
  3. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Sprinkle crumbled goat cheese and chopped walnuts on top. Serve immediately.
