Spinach Ricotta Stuffed Manicotti

Ingredients
  

  • 15 oz ricotta cheese 1 container, drained if watery for thicker filling
  • 10 oz frozen chopped spinach thawed and squeezed dry
  • 1 medium onion chopped, for flavor
  • 1 large egg for binding filling
  • 2 garlic cloves minced, for aromatics
  • 1 teaspoon Italian seasoning dried herbs blend
  • teaspoon nutmeg freshly grated, optional for depth
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 8 oz uncooked manicotti shells no-boil pasta
  • 4 cups marinara sauce for baking
  • 1 cup mozzarella cheese shredded, for filling
  • 1 cup mozzarella cheese shredded, for topping
  • ½ cup Parmesan cheese grated, for filling
  • ½ cup Parmesan cheese grated, for topping

Equipment

  • 1 9x13-inch Casserole Dish for baking the stuffed manicotti
  • 1 Mixing bowl for combining ricotta filling
  • 1 Piping Bag or Plastic Bag for stuffing the manicotti shells

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ricotta, thawed spinach, chopped onion, egg, garlic, Italian seasoning, nutmeg, salt, pepper, 1 cup mozzarella, and ½ cup Parmesan.
  3. Spread about 1 cup of marinara sauce evenly on the bottom of a 9x13-inch casserole dish.
  4. Transfer the ricotta mixture to a piping bag or plastic bag and cut a small tip off one end.
  5. Stuff each uncooked manicotti shell with the ricotta-spinach mixture and arrange in a single layer in the dish.
  6. Pour the remaining marinara sauce over the stuffed shells, ensuring they are fully covered.
  7. Sprinkle the remaining 1 cup mozzarella and ½ cup Parmesan over the top.
  8. Cover the dish with foil and bake for 1 hour.
  9. Remove foil and bake uncovered for an additional 15–20 minutes until the noodles are tender and the cheese is melted.
  10. Optionally, garnish with fresh basil and extra grated Parmesan before serving.
