Ingredients
  

  • ½ cup butter melted and slightly cooled
  • 20 oz. frozen chopped spinach thawed and excess water squeezed
  • 2 cups stuffing mix cornbread flavored recommended
  • 1 teaspoon Italian seasoning dried
  • ½ teaspoon garlic powder optional, adjust to taste
  • ½ cup yellow onion finely diced
  • 4 large eggs beaten
  • ½ cup parmesan cheese freshly shredded

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a small saucepan or microwave and let it cool slightly.
  3. Cook the chopped spinach according to package directions, usually 5–7 minutes in the microwave. Allow it to cool, then squeeze out all excess moisture using a fine mesh cloth or colander.
  4. In a large mixing bowl, combine the squeezed spinach, stuffing mix, Italian seasoning, garlic powder, diced onion, beaten eggs, parmesan cheese, and melted butter. Mix thoroughly until evenly combined.
  5. Scoop the mixture with a cookie scoop or spoon and roll into small balls with your hands. Place the balls on a parchment-lined baking sheet, leaving space between each.
  6. Bake in the preheated oven for 17–20 minutes, until lightly golden on the outside. Remove and let cool slightly before serving.
