Slow Cooker Beef Manhattan

Ingredients
  

  • 2 –3 lb beef chuck roast cut into large chunks, for slow cooking
  • 1 packet onion soup mix about 1 oz, for seasoning
  • 1 packet brown gravy mix about 1 oz, for sauce
  • ¼ cup red wine vinegar for depth of flavor
  • 4 cups prepared mashed potatoes for serving
  • 6 –8 slices garlic toast prepared, for base of open-face sandwiches

Method
 

  1. Place beef chunks into a 4-quart slow cooker.
  2. Sprinkle onion soup mix and brown gravy mix evenly over the beef.
  3. Pour red wine vinegar over the top of the beef.
  4. Cover the slow cooker and cook on low for 6–8 hours or on high for 4 hours until beef is tender.
  5. Shred the beef using two forks, keeping the cooking juices (au jus) in the slow cooker.
  6. To assemble: Place garlic toast slices on plates.
  7. Spread a layer of mashed potatoes on each slice of toast.
  8. Top with shredded beef and spoon some of the au jus over the top.
  9. Serve hot immediately.
