Ingredients
  

  • ½ cup unsalted butter for roux
  • 6 green onions white and green parts, finely chopped
  • ½ cup all-purpose flour for roux
  • 1 lb crawfish meat cooked, shelled
  • 1 ½ lb raw shrimp peeled, deveined, roughly chopped
  • ½ lb crab meat lump or claw, picked over for shells
  • 4 cups heavy cream room temperature
  • 4 cups half-and-half room temperature
  • 1 14.75 oz can creamed corn
  • 1 ½ teaspoon Creole seasoning Tony Chachere's recommended
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon kosher salt plus more to taste
  • 2 teaspoon freshly cracked black pepper
  • 1 teaspoon cayenne pepper
  • ¼ cup fresh chives minced, optional garnish
  • Crusty bread for serving, optional

Method
 

  1. Melt the butter in a large heavy-bottomed pot over medium heat.
  2. Add the chopped green onions and cook for 3 minutes, stirring, until tender.
  3. Stir in the flour until fully incorporated to make a roux.
  4. Add crawfish, shrimp, crab, heavy cream, half-and-half, creamed corn, Creole seasoning, Old Bay, salt, black pepper, and cayenne to the pot.
  5. Bring the mixture to a gentle simmer over medium-high heat, stirring frequently. Reduce heat to medium-low and cook for 40 minutes, stirring occasionally until thickened and flavors meld.
  6. Ladle the bisque into bowls and garnish with minced chives if desired.
  7. Serve hot with crusty bread on the side, if using.
