Ingredients
  

  • 1 lb. boneless skinless chicken breasts (about 2 medium breasts)
  • 1 tablespoon avocado oil or neutral oil
  • ½ cup red wine or chicken broth for deglazing
  • 1 cup tomato puree smooth, no chunks
  • ½ cup Monterey Jack cheese shredded, for topping
Toppings (optional):
  • sliced green onions
  • diced avocado
  • chopped cherry tomatoes
  • chopped fresh parsley or cilantro
BBQ spice rub:
  • 1 tablespoon smoked paprika
  • teaspoon ground black pepper
  • ½ teaspoon sea salt
  • ½ teaspoon ground coriander
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper

Method
 

  1. Whisk together all BBQ spice rub ingredients in a small bowl.
  2. Rub the spice blend evenly over all sides of the chicken breasts.
  3. Heat avocado oil in a large skillet or Dutch oven over medium-high heat.
  4. Add chicken and cook 4–6 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
  5. Pour in red wine or chicken broth and simmer, scraping the bottom of the pan to loosen browned bits.
  6. Stir in tomato puree and whisk to combine into a smooth sauce.
  7. Return the chicken to the skillet and spoon sauce over the top. Sprinkle with shredded Monterey Jack cheese.
  8. Reduce heat to low and simmer until cheese is melted and sauce is bubbling.
  9. Remove from heat, add optional toppings, and serve immediately.
