Ingredients
  

  • 1 pound ground beef 80/20 lean-to-fat ratio, for juiciness
  • 2 teaspoons onion powder for mild savory flavor
  • 1 tablespoon fresh ginger peeled and minced
  • 5 cloves garlic minced, for a fragrant sauce
  • Salt to taste, for seasoning
  • Black pepper to taste, freshly ground if possible
  • 10 ounces lo mein noodles uncooked, will be boiled before combining
  • 1 bunch scallions chopped, separate white bottoms and green tops
  • Sesame seeds for garnish, optional
  • Sauce Ingredients:
  • ½ cup soy sauce low-sodium preferred
  • ½ cup beef broth or water, for sauce base
  • ½ teaspoon beef bouillon adds umami depth
  • 3 tablespoons hoisin sauce for sweetness and richness
  • cup honey for balanced sweetness
  • 1 teaspoon red pepper flakes optional, for heat
  • 2 tablespoons cornstarch to thicken the sauce

Method
 

  1. In a medium bowl, whisk together soy sauce, beef broth, beef bouillon, hoisin sauce, honey, red pepper flakes, and cornstarch until smooth. Set aside.
  2. Chop the scallions and separate the white bottoms from the green tops. prep
  3. Heat a large skillet over medium-high heat. Add the ground beef and white scallion bottoms. Cook, breaking the beef into small pieces, until no longer pink, about 7–10 minutes.
  4. Stir in onion powder, minced ginger, garlic, salt, and black pepper. Cook for an additional 2–3 minutes until fragrant.
  5. Pour in the prepared sauce and stir frequently. Simmer until the sauce thickens slightly, about 5–7 minutes.
  6. Meanwhile, bring a pot of water to a boil. Cook lo mein noodles according to package instructions until al dente. Drain and add directly to the skillet with beef and sauce.
  7. Toss everything together to coat noodles evenly with the sauce. Sprinkle with chopped green scallion tops and sesame seeds. Serve immediately.
