Ingredients
  

  • 1 tablespoon olive oil for sautéing
  • 1 small yellow onion minced, for sweetness
  • 3 cloves garlic minced, aromatic flavor
  • 1 ½ tablespoon tomato paste for depth
  • ½ cup sun-dried tomatoes chopped, for tangy richness
  • 1 teaspoon Italian seasoning herb blend
  • ½ teaspoon red chili flakes optional, for heat
  • 1 teaspoon salt to taste
  • ¾ cup vegetable broth or water plus bouillon
  • 1 cup coconut milk full-fat for creaminess
  • 30 oz canned chickpeas 2 cans, drained and rinsed
  • 1 handful fresh spinach or basil torn, for freshness

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add minced onion and garlic, and sauté until fragrant, about 5 minutes.
  2. Add sun-dried tomatoes, tomato paste, Italian seasoning, red chili flakes, and salt. Cook for 3 minutes, stirring, until fragrant.
  3. Pour in vegetable broth and coconut milk, stirring to create a smooth sauce.
  4. Stir in chickpeas, cover, and cook 2–3 minutes until heated through and coated in sauce.
  5. Finish by adding fresh spinach or basil and stir until wilted. serve immediately with toasted bread, rice, or pasta.
