Ingredients
  

  • 2 hard-boiled eggs peeled and chopped
  • ½ red bell pepper diced
  • ½ red onion diced
  • 2 ribs celery chopped
  • 8 oz. macaroni uncooked, any short pasta works
Dressing:
  • 1 cup mayonnaise or use light mayo for a healthier option
  • 1 tablespoon Dijon mustard for a mild tangy flavor
  • 1 tablespoon sweet pickle relish for a touch of sweetness
  • 1 tablespoon red wine vinegar adds acidity

Method
 

  1. Bring a pot of water to a boil, then add the macaroni and cook until tender. Drain the pasta in a colander and rinse with cold water to cool.

  2. While the macaroni is cooking, dice the hard-boiled eggs, bell pepper, onion, and celery.
