Ingredients
  

  • 2 tablespoons extra-virgin olive oil for seasoning chicken
  • 2 teaspoons Adobo all-purpose seasoning or substitute with Cajun or Creole seasoning
  • 1 ½ teaspoons Italian seasoning dried herbs blend
  • 1 ½ teaspoons smoked paprika adds smoky flavor
  • ½ teaspoon onion powder for seasoning
  • ½ teaspoon fine sea salt adjust if using a salted seasoning
  • ½ teaspoon black pepper freshly ground
  • 8 chicken legs drumsticks, cleaned and patted dry
  • ½ tablespoon unsalted butter for greasing baking dish
  • ½ yellow onion thinly sliced
  • ½ green bell pepper thinly sliced
  • ½ cup chicken broth low-sodium preferred
  • 1 tablespoon all-purpose flour to thicken broth

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, combine olive oil, Adobo seasoning, Italian seasoning, smoked paprika, onion powder, salt, and pepper. Mix well.
  3. Pat chicken legs dry and remove any excess fat. Place in a large bowl and rub seasoning mixture evenly over each drumstick.
  4. Coat the bottom of a 9x13-inch baking dish with butter. Arrange seasoned chicken legs in the dish and scatter sliced onion and bell pepper around them.
  5. In a small bowl, whisk together chicken broth and flour until smooth. Pour the mixture into the bottom of the baking dish around the chicken, not over the top.
  6. Cover baking dish with aluminum foil and bake for 45 minutes.
  7. Remove foil carefully, baste chicken with broth, and bake uncovered for an additional 30 minutes until golden and cooked through.
  8. Optional: Baste chicken one more time with broth before serving.
