Grilled Mushroom Skewers

Ingredients
  

  • 14 oz 400 g mushrooms, halved (cremini or button mushrooms)
  • 2 tablespoons oil canola or olive (for marinade)
  • 2 tablespoons Tamari soy sauce, or coconut aminos (for marinade)
  • 3 –4 garlic cloves finely chopped (fresh for best flavor)
  • 2 teaspoons fresh thyme chopped (aromatic herb)
  • 2 tablespoons fresh parsley chopped (for freshness)
  • 1 teaspoon paprika powder or chili to taste (for smokiness or heat)
  • ½ teaspoon black pepper to taste (for seasoning)
  • 1 tablespoon oil canola or olive (for grilling brush)
  • 1 tablespoon Tamari soy sauce, or coconut aminos (for grilling brush)
  • Optional garnishes: fresh parsley chili flakes, lemon wedges (for serving)

Method
 

  1. In a large bowl, combine oil, Tamari, garlic, thyme, parsley, paprika, and black pepper. Stir to form the marinade.
  2. Add the halved mushrooms to the bowl and toss until evenly coated with the marinade.
  3. In a small bowl, mix 1 tablespoon oil with 1 tablespoon Tamari for brushing during grilling.
  4. Thread the mushrooms onto skewers. Grill on a preheated grill or in a cast-iron grill pan over medium-high heat for 3–4 minutes per side, brushing occasionally with the oil and Tamari mixture. Press gently with a spatula if using a pan.
  5. Transfer the skewers to a serving platter and sprinkle with fresh parsley and chili flakes as desired.
  6. Serve immediately with lemon wedges on the side for extra brightness.
