Ingredients
  

  • 1.5 lb boneless skinless chicken breasts (sliced into 6 pieces)
Marinade
  • 1 teaspoon garlic powder for savory flavor
  • 1 teaspoon onion powder enhances aroma
  • 1 teaspoon paprika adds color and mild heat
  • ½ teaspoon dried oregano Italian seasoning
  • ½ teaspoon kosher salt for seasoning
  • 1 tablespoon balsamic vinegar for tang and flavor
Topping
  • ½ cup reduced-fat mozzarella shredded, for melting
  • 2 cups fresh tomatoes chopped, for bruschetta
  • ¼ cup red onion finely chopped
  • 1 tablespoon balsamic vinegar for brightness
  • ½ teaspoon kosher salt for seasoning
  • 2 tablespoon fresh basil chopped, for garnish

Method
 

  1. Slice chicken breasts into six thinner pieces for quicker marination and even cooking.
  2. Combine garlic powder, onion powder, paprika, oregano, salt, and balsamic vinegar in a small bowl to make a paste.
  3. Chop tomatoes and red onion. Add chopped basil, balsamic vinegar, and salt to a bowl. Toss to combine and set aside.
  4. Preheat a grill pan over medium-high heat and lightly spray with cooking spray.
  5. Grill chicken 5 minutes per side until fully cooked and juices run clear. cook
  6. Top each chicken piece with shredded mozzarella. Cover pan with lid or foil to allow cheese to melt, about 2–3 minutes.
  7. Place grilled chicken on a serving platter and spoon the tomato-basil mixture over the top.
