Garlic Parmesan Chicken and Potatoes

Ingredients
  

  • 1 pound chicken breasts cut into 1-inch cubes (for quick, even cooking)
  • 4 –5 small to medium russet potatoes peeled and diced (for crispy bites)
  • 2 tablespoons olive oil for tossing potatoes
  • ½ teaspoon salt for seasoning potatoes and chicken
  • ½ teaspoon black pepper for seasoning potatoes and chicken
  • ½ teaspoon garlic powder for potato flavor
  • ½ teaspoon paprika for potato seasoning
  • 2 tablespoons butter for cooking chicken
  • 1 teaspoon paprika for chicken
  • 1 teaspoon onion powder for chicken
  • 1 teaspoon Italian seasoning for chicken
  • 1 –2 tablespoons minced garlic adds fresh garlic flavor
  • ¼ cup garlic Parmesan sauce Buffalo Wild Wings or similar, to coat chicken
  • 1 cup shredded mozzarella cheese for topping and melting
  • Dried parsley for garnish (optional, adds color and flavor)

Method
 

  1. Wash, peel, and dice the potatoes into small cubes.
  2. Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  3. Cook the potatoes in an air fryer at 400°F for 25 minutes, shaking halfway through for even crisping.
  4. If using an oven, bake potatoes at 400°F for 30 minutes, stirring occasionally.
  5. Meanwhile, cut chicken into 1-inch cubes.
  6. Heat butter in a medium skillet over medium-high heat.
  7. Add chicken cubes and season with salt, pepper, paprika, onion powder, and Italian seasoning.
  8. Cook chicken until browned and fully cooked, about 8–10 minutes.
  9. Add minced garlic and garlic Parmesan sauce to the skillet, stirring to coat the chicken evenly.
  10. Add the cooked potatoes to the skillet and gently toss with the chicken and sauce.
  11. Sprinkle shredded mozzarella cheese on top and melt under the broiler for 2–3 minutes, or cover with a lid on the stove until melted.
  12. Garnish with dried parsley and extra garlic Parmesan sauce if desired.
