Ingredients

  • 2 ¼ cups semi-sweet chocolate chips or small chunks, for melting
  • 4 large eggs room temperature
  • 2 sticks unsalted butter melted
  • 1 ½ cups granulated sugar white
  • 2 teaspoons vanilla extract
  • 1 teaspoon coarse sea salt
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour unbleached
  • cup cocoa powder unsweetened

Method

  1. Place the chocolate in a large metal bowl and set it over a pot of simmering water, ensuring the water does not touch the bowl.
A hand gently stirring melted chocolate in a bowl placed over a stove, the chocolate turning silky smooth as it melts. The focus is on the smoothness and consistency of the chocolate, ready to be combined into the brownie mix.
  2. Stir occasionally with a rubber spatula until fully melted.
  3. Whisk together eggs and melted butter in a separate bowl.
  4. Add sugar, salt, and vanilla, mixing just until combined.
  5. Sift the flour, cocoa powder, and baking soda into the bowl with the egg mixture.

  7. Pour the melted chocolate into the batter and fold to combine.
  8. Butter a 13x9 baking dish, then line it with parchment paper, ensuring it covers the sides.
  9. Transfer the batter to the prepared dish, smoothing it out evenly with a rubber spatula.
  10. Bake at 350°F for 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

  11. Once removed from the oven, sprinkle the remaining ¼ cup chocolate chips on top of the brownies.
  12. Allow brownies to cool for 25 to 30 minutes before slicing and serving.
