Ingredients
  

  • 4 slices bacon chopped, for smoky base
  • 2 12-ounce packages kielbasa sausage (cut into ½-inch slices, for smokiness)
  • 1 ½ pounds ground beef 80/20, for juiciness
  • 1 medium onion diced, adds sweetness
  • 3 cloves garlic minced, fresh
  • 3 tablespoon all-purpose flour for thickening
  • 1 ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper freshly ground
  • 1 teaspoon chili powder for subtle heat
  • 1 14.5-ounce can petite diced tomatoes (with liquid)
  • 2 16-ounce cans baked beans (sweeter) or ranch beans (more savory, with liquid)
  • 1 7-ounce can chopped green chilies (with liquid, adds mild heat)
  • 1 15-ounce can sweet corn (with liquid, for sweetness)
  • 2 medium russet potatoes peeled, cut into ½-inch cubes
  • 1 cup water adjust to desired thickness
  • 2 tablespoon parsley chopped, for garnish

Method
 

  1. Cook the bacon in a large stockpot over medium heat until crisp. Remove with a slotted spoon and drain on paper towels.
  2. Add kielbasa slices to the bacon drippings and brown on both sides. Remove and set aside with the bacon.
  3. Add ground beef, diced onion, and minced garlic to the pot. Cook until beef is no longer pink, stirring occasionally.
  4. Sprinkle the flour, salt, black pepper, and chili powder over the beef mixture. Stir and cook for 1 minute to incorporate.
  5. Stir in the diced tomatoes, baked beans, green chilies, sweet corn, potatoes, cooked bacon, and kielbasa. Pour in 1 cup water.
  6. Bring the stew to a boil, then reduce heat to low and simmer, covered, for 1 hour. Stir occasionally to prevent sticking.
  7. Check consistency and add extra water if the stew is too thick.
  8. Garnish with chopped parsley before serving.
