Ingredients

  • 1 batch homemade puff pastry or 1.1 lb store-bought puff pastry, thawed as directed
  • 8 oz 226 g cream cheese, softened (for creamy filling)
  • ½ cup 100 g granulated sugar (sweetens the cream cheese filling)
  • 1 teaspoon lemon juice adds brightness
  • ¾ teaspoon vanilla extract for flavor
  • 1 large egg for egg wash
  • 2 teaspoons water for egg wash
  • 1 cup 125 g powdered sugar (for glaze)
  • 3-5 teaspoons milk to thin glaze
  • ½ teaspoon vanilla extract for glaze

Method

  1. Preheat the oven to 400°F (205°C) and line two baking sheets with parchment paper. Set aside.
  2. Mix the cream cheese, sugar, lemon juice, and vanilla extract until smooth.
"Start by preparing the creamy filling for your cheese danish. Combine softened cream cheese with a pinch of sugar in a bowl, mixing until smooth and well-combined. This filling will form the rich, decadent center of the danish. Make sure the cream cheese is softened to ensure a smooth and creamy texture when mixed."
  3. Cut the puff pastry into two even parts (if using homemade, divide width-wise; if using store-bought, it’s already divided into sheets).
  4. Roll the first half of the puff pastry into a 12x12” square, about 1/16” thick. Cut into 6 even-sized squares.
"Place the cut puff pastry squares on a baking sheet lined with parchment paper, making sure they are evenly spaced for even baking. These squares are the perfect base for your creamy cheese filling. The puff pastry will rise beautifully during baking, forming a golden, flaky crust that pairs wonderfully with the rich cheese center."
  5. Place the squares onto the prepared baking sheet and spoon about 2 tablespoons of filling into the center of each square. Fold the corners towards the center, leaving a small gap in the middle.
  6. Whisk together the egg and water for the egg wash, then brush over the tops of the puff pastry squares.
"Spread the creamy cheese filling evenly over each puff pastry square, leaving a small border around the edges. Once the filling is in place, gently brush the edges of the pastry with a beaten egg wash. This will help create a golden, glossy finish once baked. The filling will provide a rich, creamy center, while the egg wash gives the pastry its beautiful color and texture."
  7. Transfer the danishes to the preheated oven and bake for 17-19 minutes or until golden and puffed.
  8. Repeat the process with the second half of the puff pastry dough.
  9. Allow the cheese danishes to cool completely before adding glaze.
  10. To make the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  11. Drizzle the glaze generously over the cooled danishes. Enjoy!
