Ingredients
  

  • 1 loaf French bread preferably fresh, crusty
  • 2 chicken breasts boneless, skinless
  • 4 cups shredded mozzarella cheese for topping
  • 2 ½ – 3 cups buffalo sauce for coating and spreading
  • cup sliced red onion thinly sliced
  • 2 tablespoons onion powder for chicken seasoning
  • 2 tablespoons garlic powder for chicken seasoning
  • 2 tablespoons paprika smoky flavor for chicken
  • 2 tablespoons Cajun seasoning spice blend for chicken
  • 2 tablespoons vegetable oil for cooking chicken
  • 3 tablespoons butter melted (for brushing bread)
  • 1 teaspoon minced garlic for brushing bread
  • Ranch dressing as needed (for drizzling before serving)

Method
 

  1. Season chicken breasts evenly with onion powder, garlic powder, paprika, and Cajun seasoning.
  2. Heat vegetable oil and 1 teaspoon of butter in an oven-safe skillet over medium heat. Add chicken and cook until browned on both sides.
  3. Transfer chicken to a 400°F (200°C) oven for 8–10 minutes or until internal temperature reaches 165°F (74°C).
  4. Remove chicken from the oven and let rest for at least 10 minutes.
  5. Chop the cooked chicken into small pieces, then toss with ½ cup of buffalo sauce until evenly coated.
  6. Slice French bread in half lengthwise.
  7. In a small bowl, mix melted butter with minced garlic and brush over each half of the bread.
  8. Place bread under the broiler for 1–2 minutes until lightly golden.
  9. Spread remaining buffalo sauce evenly on each bread half.
  10. Top each bread half with mozzarella cheese, buffalo chicken pieces, and red onion slices.
  11. Bake in a 400°F (200°C) oven for 10–15 minutes until cheese is melted and bubbly.
  12. Remove from oven and drizzle ranch dressing on top.
  13. Cut into slices and serve warm.
