Ingredients
  

BLACKENING SEASONING
  • 1 tablespoon smoked paprika adds smoky flavor
  • 1 teaspoon dried thyme herbal note
  • 1 teaspoon dried oregano classic seasoning
  • ½ teaspoon ground cumin warm, earthy taste
  • ¼ teaspoon cayenne pepper spicy kick
  • ¼ teaspoon garlic powder enhances flavor
  • ¼ teaspoon onion powder adds depth
  • ¼ teaspoon salt balances spices
  • Freshly cracked black pepper to taste, adds heat
SHRIMP PASTA
  • ½ lb peeled and deveined shrimp medium size, fresh or thawed
  • 2 tablespoon unsalted butter for sautéing shrimp and garlic
  • 2 cloves garlic minced, aromatic
  • 15 oz can petite diced tomatoes with juice
  • ¼ teaspoon salt for sauce seasoning
  • ½ lb dry pasta spaghetti or linguine
  • 2-3 green onions sliced, for garnish
  • Handful fresh parsley chopped, for garnish
  • 1 lemon sliced, for squeezing over pasta

Method
 

  1. Combine all spices and herbs in a small bowl to create the blackening seasoning.
  2. Rinse the shrimp under cold water, pat dry with paper towels, then toss them in the blackening seasoning until evenly coated.
  3. Bring a large pot of salted water to a boil. Add the pasta and cook until tender, about 7–10 minutes. Reserve 1 cup of the pasta water, then drain the pasta.
  4. While the pasta cooks, melt butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant and slightly golden.
  5. Add the seasoned shrimp to the skillet and cook for 3–5 minutes, until the shrimp turn opaque and firm. Remove shrimp from the skillet and set aside.
  6. Pour the diced tomatoes with their juices into the skillet, along with ½ cup of the reserved pasta water. Stir, scraping up any browned bits, and simmer for 5–10 minutes until the sauce thickens slightly.
  7. Add the drained pasta to the skillet, tossing to coat in the sauce. If needed, add more reserved pasta water to loosen. Return the cooked shrimp to the skillet and stir gently to combine.
  8. Top with sliced green onions and chopped parsley. Serve immediately with lemon slices for squeezing over the dish.
