Ingredients

  • 2 cups plain Greek yogurt full-fat or low-fat, for creamy texture
  • 6 large eggs room temperature for even baking
  • ¼ cup maple syrup or honey for natural sweetness
  • 1 teaspoon vanilla extract for flavor
  • 2 tablespoons cornstarch or tapioca starch to help set the yogurt
  • 1 cup berries fresh or frozen (for topping and flavor)

Method

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan with butter or oil.
  2. In a large mixing bowl, whisk together Greek yogurt, eggs, maple syrup, vanilla extract, and cornstarch until smooth and fully combined.
  3. Pour the yogurt mixture evenly into the prepared baking pan. Dollop the berries on top and gently press them slightly into the mixture.
  4. Bake in the preheated oven for 35–40 minutes, until the edges are lightly golden and the top is set. The center may still jiggle slightly, which is normal.
  5. Remove the pan from the oven and allow it to cool completely for about 10 minutes.
  6. Slice into 9 pieces once cooled. Serve as is or with additional yogurt and fresh berries.
