Ingredients

  • 3 tablespoons cornstarch divided
  • 1 pound flank steak cut into thin 1-inch pieces
  • ½ cup low-sodium soy sauce for a less salty flavor
  • 3 tablespoons packed light brown sugar adds sweetness
  • 1 tablespoon minced garlic for a garlicky kick
  • 2 teaspoons grated fresh ginger adds aromatic flavor
  • 2 tablespoons vegetable oil divided
  • 4 cups small broccoli florets fresh or blanched
  • ½ cup sliced white onions adds sweetness

Method

  1. In a large bowl, whisk together 2 tablespoons of cornstarch with 3 tablespoons of water. Add the beef to the bowl and toss to coat evenly.
Raw beef strips marinated in a dark, flavorful sauce, placed in a glass bowl. The beef is red and covered in the marinade, with visible spices and herbs. The bowl rests on a light-colored surface.
  2. In a separate small bowl, whisk together the remaining 1 tablespoon cornstarch with soy sauce, brown sugar, garlic, and ginger. Set the sauce aside.
  3. Heat a large nonstick sauté pan over medium heat. Add 1 tablespoon vegetable oil and once hot, add the beef. Cook, stirring constantly, until the beef is almost cooked through. Transfer the beef to a plate and set it aside.
A pan of fresh broccoli and sliced onions sautéing together, with the broccoli remaining bright green and the onions soft and translucent. The ingredients are lightly coated in oil, with a simple kitchen background.
  4. Add the remaining 1 tablespoon vegetable oil to the pan. Once heated, add the broccoli florets and sliced onions. Stir occasionally and cook until the broccoli is tender, about 4 minutes.
Pieces of beef cooking in a pan with a cornstarch coating, giving the beef a glossy, tender appearance. The beef is browning and cooking in a small amount of sauce, with a clean kitchen backdrop
  5. Return the beef to the pan, then add the prepared sauce. Bring the mixture to a boil and cook, stirring, for 1 minute or until the sauce thickens slightly. Serve immediately with rice or noodles.
