BBQ Chicken Pizza

A crispy, cheesy BBQ chicken pizza with red onions, smoked gouda, and fresh cilantro for a perfect homemade dinner!

Ingredients
  

  • ½ recipe Homemade Pizza Dough or 1 lb store-bought, thawed if frozen
  • 1 tablespoon Olive Oil divided
  • 1 tablespoon Cornmeal for dusting pan
  • cup + 2 tablespoon Barbecue Sauce your favorite
  • 1 cup Cooked Chicken chopped or shredded, ~8 oz breast
  • cup Shredded Mozzarella Cheese about 70 g
  • cup Shredded Smoked Gouda Cheese about 70 g
  • ½ Small Red Onion thinly sliced
  • 1 tablespoon Fresh Cilantro chopped, for topping, optional

Method
 

  1. Prepare the pizza dough according to your recipe through step 3. If using store-bought frozen dough, make sure it is fully thawed.
  2. Preheat oven to 475°F (246°C) and allow it to heat 15–20 minutes. If using a pizza stone, place it in the oven to preheat. Lightly grease a baking sheet or pizza pan with ½ tablespoon olive oil and sprinkle cornmeal on top.
  3. Punch down the dough to release air bubbles. On a floured surface, flatten the dough into a disc and stretch into a 12-inch circle about ½-inch thick. Lift edges to form a rim. If dough shrinks back, cover and rest 5–10 minutes.
  4. Use your fingers to press small dents into the dough to prevent bubbling. Brush remaining olive oil over the surface. Spread ⅓ cup BBQ sauce evenly on the dough. Toss cooked chicken with remaining BBQ sauce and scatter over dough. Top with mozzarella, gouda, and sliced red onion.
  5. Bake pizza for 14–15 minutes until crust is golden and cheese is melted.
  6. Remove from oven, sprinkle with fresh cilantro if desired. Slice hot and serve immediately.
  7. Store leftover pizza in the refrigerator for up to 5 days, or freeze tightly wrapped for up to 3 months. Reheat slices in microwave or bake covered at 350°F (204°C) until warmed.

Notes

Use half the dough for one pizza and freeze the rest for later. Swap smoked gouda with mozzarella if preferred. Add or omit onions and cilantro to taste.
