Ingredients
  

  • 4 boneless skinless chicken breasts (for lean, tender meat)
  • ½ cup mayonnaise full-fat, for creamy topping
  • 2 tablespoon dry ranch seasoning use seasoning mix, not dip mix
  • cup shredded cheddar cheese sharp or mild, based on preference
  • cup panko breadcrumbs for crispy topping
  • Cooking spray to lightly coat panko for browning

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Place the chicken breasts in a large baking dish in a single layer.
  3. In a small bowl, mix mayonnaise, ranch seasoning, and shredded cheddar until smooth.
  4. Spread the mixture evenly over the tops of the chicken breasts.
  5. Sprinkle the panko breadcrumbs over the coated chicken and lightly spray with cooking spray.
  6. Bake for 25 minutes, or until the chicken reaches an internal temperature of 165°F and the topping is golden brown.
  7. Remove from oven and let rest 2–3 minutes before serving.
