Baked Garlic Parmesan Potato Wedges

Crispy on the outside, tender on the inside, these garlic Parmesan potato wedges with bacon are a family favorite side dish.

Ingredients
  

  • 4 large russet potatoes scrubbed and cut into 8 wedges each (even pieces for uniform cooking)
  • 3 tablespoon olive oil for coating potatoes
  • 4 large garlic cloves minced (fresh for flavor)
  • 1 teaspoon Herbs de Provence or substitute oregano, basil, or thyme
  • ¼ teaspoon sea salt adjust to taste
  • ¼ teaspoon black pepper freshly ground recommended
  • ½ cup grated Parmesan cheese divided (¼ cup for first bake, ¼ cup later)
  • 4 slices cooked bacon drained and chopped (for topping)
  • 1 tablespoon chopped Italian parsley for garnish

Method
 

  1. Place potato wedges, olive oil, and minced garlic in a large mixing bowl. Toss until all wedges are evenly coated.
  2. Sprinkle Herbs de Provence, salt, and black pepper over the potatoes and toss again to combine.
  3. Spread the potato wedges in a single layer on a foil-lined baking sheet. Sprinkle with ¼ cup Parmesan cheese.
  4. Bake in a preheated 425°F (220°C) oven for 20 minutes until edges begin to brown.
  5. Flip the potato wedges, sprinkle with remaining ¼ cup Parmesan cheese and chopped bacon.
  6. Continue baking for an additional 10–15 minutes until potatoes are golden and crispy.
  7. Remove from the oven, sprinkle with chopped parsley, and serve immediately.
