Ingredients
  

  • 1 tablespoon kosher salt for seasoning wings
  • 2 teaspoons garlic powder for seasoning wings
  • 2 teaspoons paprika for seasoning wings
  • 4 pounds chicken wings wingettes or drumettes
  • 2 egg whites beaten until frothy, helps coating stick
  • ½ cup hot sauce such as Frank’s Red Hot or Louisiana Wing Sauce
  • 1 teaspoon honey for sweet balance in sauce
  • 4 tablespoons salted butter for sauce
  • Blue cheese dressing optional, for serving
  • Celery sticks optional, for serving

Method
 

  1. Preheat the oven to 450°F (232°C) and position a rack in the center. Line a rimmed baking sheet with foil and place a cooling rack inside.
  2. In a large bowl, mix the kosher salt, garlic powder, and paprika. Add the chicken wings and toss to coat evenly with the seasoning.
  3. Pour the frothy egg whites over the wings and toss again until fully coated.
  4. Arrange the wings skin-side up on the prepared cooling rack. Reduce oven temperature to 425°F (218°C) and bake for 45–50 minutes, until golden brown and the internal temperature reaches 165°F (74°C).
  5. While wings bake, make the buffalo sauce. In a small saucepan over medium-high heat, whisk together the hot sauce and honey until simmering. Add butter and stir until melted. Remove from heat.
  6. Transfer the hot wings to a large bowl, pour the buffalo sauce over them, and toss until evenly coated. Serve immediately with blue cheese dressing and celery sticks.
