Pineapple-Blueberry-Pomegranate Fruit Salad


Fruit can get a bit boring in winter. Yeah yeah, we all love citrus. But after the 10th or 11th straight clementine, you kinda want something else.

So to make things a little livelier in the fruit department of the Brier house, I threw together this delicious little concoction. Sweet pineapple, juicy organic blueberries and pow – the pop of the tart pomegranate seeds.

I just started buying pomegranates in the last few years. I felt intimidated by them and then when I would google there were all these crazy ways to get the seeds out – soaking them in water, etc. I found the key was not to overthink it. Cut into it enough to be able to crack it open. Turn it over so the outside is facing up, have the bottom over a bowl and whack the skin with a wooden spoon a few times for the seeds to go raining into the bowl. Or, just use your fingers to dislodge chunks of seeds from the membranes. My kids totally got into doing this.

I cut up one juicy pineapple into small bites, added a 1/2 pint of organic blueberries and the seeds from a pomegranate. That is it ladies and gentleman. The combination of flavors in this salad was intriguing and appealing at the same time. And it stays really nicely in the fridge for a few days, so make it on Sunday and snack on it through the week.
