Slow Cooker Pork & Sweet Potatoes with Fresh Cranberries

I am always thrilled when I find a successful and super delicious slow cooker recipe. I was away during christmas and was starting to plan our menu for the week we would be back. I was mentally reviewing what was in the fridge and what would still be in good shape when we go home and the lonely bag of fresh cranberries sitting in there popped in my head.

I started googling recipes for pork and cranberries. Most used the canned cranberry stuff you and I both know we love having at Thanksgiving, but that wasn’t what I wanted. Then I stumbled upon this: http://www.food.com/recipe/fresh-cranberry-slow-cooker-pork-roast-472412.

I however made several changes which I, in my opinion of course, totally improved the final dish. I ditched the spices they recommended and simply added some cayenne pepper. I used pork shoulder instead of tenderloin. Added an onion. Diced up those sweet potatoes (I used white ones from Whole Foods but regular orange is my go-to) and didn’t finish the sauce at the end – there was no need, it was all perfect. The orange juice and honey played perfectly off the tartness of the cranberries and the meaty pork.

I served this with some sriracha mayonnaise one night and pesto-mayonnaise for the husband’s lunch the next day. It added a nice something something…

 

Slow Cooker Pork & Sweet Potatoes with Fresh Cranberries

Ingredients

  • The smallest pork shoulder the butcher has - mine was probably 2 1/2lbs
  • 2-3 sweet potatoes, peeled or not - your choice - cut into fairly large chunks
  • 1 medium onion, peeled and cut into pieces slight smaller then your sweet potatoes
  • juice of 1 orange
  • 1/4 cup honey
  • 1 teaspoon cayenne pepper
  • 1 cup fresh cranberries
  • salt and pepper

Instructions

  1. Cut off any excess fat from the pork. Put salt and pepper all over it.
  2. Mix the orange juice, honey and cayenne together.
  3. Into a slow cooker set on low, put pork, sweet potatoes, onions and cranberries - put in as much as will fit. Pour the sauce over everything and cook on low 7-8 hours.
  4. Serve with some spicy mayo or pesto mayonnaise.
