Avocado-Broccoli-Feta-Chickpea Dip

I sent my husband on a death march with the kids on Sunday. I ditched them at the movies to come home and “clean”. He then hauled them to the park, dragged them home, and generally was the best husband ever all day.

But I had inadvertently starved him during all these activities. Oopsy. He came home looking for a snack and the tacos I was making were still in the thinking about vs action stage. So I scoured the fridge, threw together this dip and IT. WAS. AWESOME!!!!!!!!

Seriously so good. I get tired of standard guacamole and hummus and have always been a big fan of dips (they didn’t call me dip queen in college for nothing).

Finely chopped broccoli mixed in makes you feel borderline virtuous.

Veggies, chips, crackers, on tacos – this does the job no matter what vehicle you choose.

 

 

Avocado-Broccoli-Feta-Chickpea Dip
Modify amounts and work with what you have. Only lemons in the house? For goodness sakes don’t go buy 1 lime! Vice versa.
Ingredients
  • 4 ripe avocados
  • small head of broccoli
  • 1/4 cup french feta
  • 1 cup chickpeas
  • 1 lemon
  • 1 lime
  • salt
Instructions
  1. Mash avocados with a fork in a large bowl.
  2. Finely chop the broccoli florets and add the avocado. Same for feta and chickpeas.
  3. Squeeze the juice of the lemon and lime all over that concoction, sprinkle of salt and mix. Taste to see if you need more salt or lemon/lime juice.
