I have no idea why, but I would constantly buy sweet potatoes (yams – whatever you would like to call them – if you need to know the difference, here you go: http://www.kitchendaily.com/read/yam-sweet-potato) and not cook them. For some reason in my head they were a total pain in the ass to plop in the oven and roast for an hour. Kinda inane, right? Just some strange cooking block.
Then I saw a post in Super Healthy Kids regarding putting sweet potatoes in the slow cooker. I was like, seriously?? How did I not think of this before. I immediately hauled the crock pot out of the random place in my little kitchen I had crammed it, nestled 3 small sweet potatoes in there, set it to low and congratulated myself on being lazy and cruising through my Facebook feed when I should have been cleaning. A eureka cooking moment could have been missed!
3 1/2 hours later my little nuggets of orange joy were done. I cracked one open, put a spoonful of hummus on it, sprinkled some chopped raw broccoli, 1/4 of an avocado, salt, pepper and sriracha.
Viola. A perfect, pretty, healthy and delicious vegan lunch or dinner.
I am going to start off with just the hummus or avocado on this for the kids. And ketchup of course. Because they. just. NEED. it! ON EVERYTHING!!!
