Chia French Toast with Mango-Yogurt Maple Syrup & VEGGIEBUMP!!!


I try to limit my breakfast for dinner events to once a week, but invariably it becomes more often then that.

Those meals are always fast, satisfying and generally immune to kid rejection. Most days all the fight in me is drained out by 4pm. I need no more protests even if I am not forcing them to try whatever I make – I. Just. Want. Quiet.

This brought on the silence – everyone devoured it while I giggled to myself in the corner like a mad scientist for the little nutritional bump I pulled off successfully.

The creators generously sent me samples of the 3 flavors – classic, jalapeño and extra spicy habanero.  The spicy ones are great for us grown ups – have a real kick that enhances the flavor or chili’s, soups, eggs, etc.

But the classic is a game changer. I am not into forcing my kids to try stuff – though to be honest I am here and there doing the “you can only have that if you try one bite of this” and it is working- but this changes it all. Alleviates the pressure and kids are completely cool with it because they can’t taste any difference in what I made with it. I put it in the egg mixture for this french toast and my picky guy whom I can never sneak stuff past – had 2 servings.

I had previously tried adding finely shredded carrots to get a veggie boost to french toast and it was a total fail.

My only problem with this is that I can’t order a case of it immediately. I am mixing it in ketchup, eggs, batters – you name it, I have added it.

Now back to this french toast. Besides the veggie bump, it is also getting some wonderful nutrition from the chia seeds, raw honey and multigrain bread. Not to downplay the eggs or dairy component.

And instead of dumping a ton of maple syrup on it, I put a mango, greek yogurt and maple syrup in the blender and pureed it all together. Absolutely heavenly.

Chia French Toast with Mango-Yogurt Maple Syrup & VEGGIEBUMP!!!
  • 3 eggs
  • 1 cup whole milk/almond milk/soy – whatever you prefer
  • 1 Tablespoon chia seeds
  • 1 Tablespoon raw honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon Veggie Bump (not available in stores yet so skip)
  • 6-8 slices multigrain bread
  • butter for cooking
  • Mango-Yogurt-Maple Syrup
  • 1 cup mango
  • 1/2 cup greek yogurt
  • 1/4 cup maple syrup
  1. Whisk together in a large casserole dish ideally: eggs, milk, chia, honey, salt. Place bread into the batter so one side gets soaked. Wait 2-3 minutes and flip.
  2. In a non stick pan over medium heat, melt 1-2 Tablespoons of butter until it starts to sizzle a bit. Add soaked bread to the pan, cook until lightly browned and then flip and do same on other side. If bread is thick, will have to cook slower and lower to get it fully cooked. If it is thin, will cook faster.
  3. In a blender or food processor, combine mango, greek yogurt and maple syrup. Try not to eat all of it before the french toast is ready.
  4. Serve french toast with spoonful of mango yogurt on top.
