Homemade Sriracha-Maple Turkey Breakfast Sausage + An Amazing Breakfast Sandwich

This was my attempt to shake up the weekly breakfast for dinner routine.  I was trying to use up random elements I had laying around – 1/2 a baguette, leftover avocado and defrost organic ground turkey.

It worked out WAY better then I expected it to. Even my daughter, who was quite skeptical of the breakfast for dinner deal, took one look at the sandwich and declared it hers.

Served with a fruit and veggie smoothie and you have all your bases covered and an extremely happy crew on your hands. I let the kids taylor the sandwiches to their specific desires- Will had just egg and cheese, Matty had sausage and cheese and Emilie and I had the entire production: toasted baguette, avocado, sriracha-maple turkey sausage, fried egg and american cheese.

This needs to go down in the hall of fame of breakfast sandwiches. It was absolutely the best breakfast sandwich I have ever made or had.

Homemade Sriracha-Maple Turkey Breakfast Sausage + Amazing Breakfast Sandwich
Ingredients
  • For Sausage:
  • 1 lb ground organic turkey
  • 1 1/2 teaspoons maple syrup
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon dried sage
  • 3/4 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon sriracha
  • olive oil for cooking
  • For Sandwich:
  • baguette (cut slightly bigger then cheese slice – use your judgement)
  • 1 egg per person
  • 1 slice american cheese per person
  • 1/4 avocado per person
  • 1 cooked sausage patty
Instructions
  1. In a non stick pan, heat up a little olive oil over medium to medium high heat.
  2. Combine all the sausage ingredients in a bowl – I used my hands to get everything equally distributed throughout the meat. I had the kids help with this and made sure they washed their hands very well afterwards.
  3. I used an ice cream scooper to portion the meat. I wet my hands before taking the ball of meat and patting it into a flat patty. The meat is very sticky and this helped a lot. Re-wet hands for each patty.
  4. Pan fry until browned on both sides and cooked through the middle – cut one in half to check.
  5. For sandwich: wipe out sausage pan and over medium high heat, add butter and then break your eggs into the pan. Use the side of the spatula to break the yolk and spread it over the white. Flip over after a minute or so and add slice of cheese to melt on the cooked side facing up.
  6. Meanwhile toast a cut up baguette, place avocado slices on the bottom, then sausage patty, egg & cheese and top of baguette.
  7. Supreme happiness follows consumption of above sandwich.
