Roasted Brussel Sprouts with Goat Cheese


Brussel sprouts are my husband’s favorite vegetable so I have completely embraced them. Prior to that I am not sure if I ever gave brussel sprouts a second thought.

And they are cute little things aren’t they?

I could have eaten the entire batch of these. They had a perfect amount of acid from the lemon and the creamy goat cheese complimented it just right.

This is crazy simple to make. Perfect addition to any dinner. Super easy to throw in the oven with a roast chicken. Or need a different appetizer for a party? Serve this with some funky toothpicks on the side and let them have at it.

Roasted Brussel Sprouts with Goat Cheese
Serves 8. 2 WW points
  • 1 lb of brussel sprouts
  • 1 Tablespoon olive oil
  • 1 Tablespoon fresh lemon juice
  • 2 oz goat cheese
  • salt and pepper
  1. Oven to 400.
  2. Cut the root off the brussel sprout, cut in half and peel off any damaged leaves.
  3. Put all of them into a casserole dish. Mix olive oil and lemon together, add some salt and pepper, and pour over brussel sprouts. Toss to cover thoroughly.
  4. Into oven for 10 minutes. Stir and then pinch off pieces of goat cheese and sprinkle over top – back into oven for 10 minutes.
  5. Sprinkle with a bit more salt and pepper if desired (give it a taste and see…)
