Crispy Brown Rice-Nut Butter Snack


I would say this as a cousin to the granola family. My kids have been really into dry cereal lately and I was trying to think of some way to dress it up a bit in an attempt to get more nutrients into them.

I was reading Mark Bittman’s Food Matters Cookbook and he had a recipe for a healthy rice crispy treat that I modified to better fit the flavor profiles little kids enjoy. I also decreased the amount of nut butter he used – he needed more to be able to make them into balls

Crispy Brown Rice Cereal – Nut Butter Snack
  • 4 cups crispy brown rice cereal
  • 1 cup dried fruit (I used tart dried cherries)
  • 1 cup walnuts – grind in a food processor until bread crumb consistency (optional – both the nuts and the grinding – could just chop up a bit)
  • 1 cup cocoa nibs (or mini chocolate chips if you can’t find cocoa nibs)
  • 2 Tablespoons chia seeds
  • 1 cup peanut butter (or any other nut butter)
  • 1/3 cup raw honey (or regular or maple syrup – but the raw honey consistency is helpful in the recipe)
  • 1/2 teaspoon Maldon salt or sea salt
  • 1 Tablespoon vanilla extract
  1. In a large bowl mix together cereal, fruit, nuts if using and chia seeds.
  2. In a smaller bowl, stir together nut butter, honey, salt and vanilla. Add that to the larger bowl and gently mix with a spoon or your hands to combine everything.
  3. Serve in a bowl just as is – great, filling snack. I tried it with some unsweetened almond milk and that was amazing.
