Two Perfect Summer Corn Recipes


It is impossible for me to get through a farmers market or grocery store in summer and not come out with at least a half dozen ears of corn.

However, nothing peeves me more in the eating realm, then a kernel of corn stuck between my teeth. I love corn – but it has to be off the cob for pure enjoyment.

I simply put the shucked corn over a bowl, get a large sharp knife and anchoring it on the top with one hand, bottom of it in the bowl, take the knife and slide it down between the kernels and the cob and let them fall right off.

You barely have to cook fresh summer corn – the kids usually take a few nibbles out of it before I get a chance to cut it all off. But I did recently make these two great side dishes that I have to share.

First – I got a package of haricot verts from Trader Joes – around 12oz. I cut them into a small pieced about the size of a kernels of corn. Heated up some olive oil, added a smashed garlic clove to the oil over medium heat and dumped in all those haricot verts (could use regular green beens also). Sauteed for a few minutes until they started getting vibrantly green, then added in corn from 4 ears that I had cut off while the beans cooked. Generous splash of kosher or sea salt and pepper, juice of a lemon and 2 Tablespoons chopped chives. Top with some butter and more salt if needed. Viola.

The second dish. Saute a sliced shallot in some olive oil over medium heat for a minute. Add a container of cherry tomatoes and turn heat up to medium high. Cook for a few minutes and then gently with a wooden spoon, start smashing the tomatoes. I angle the spoon so the tomato squirt will aim away from me to avoid getting splattered.

Add corn from 4 ears, 2 Tablespoons of fresh dill, salt and pepper. Cook for a minute or two and then pour into a bowl.

Now you have two options – you want to add about a 1/2 cup of feta cheese. If you add it while hot like I did you get a feta cheese sauce basically and it was wonderful. If I was taking this to a party or picnic, I would have let it cool and added the cheese in crumbles. You decide!
