Mexican Veggie-Rice Bowl


Lunch for my new past time – vegan before 6. This is also a clean out the fridge lunch that turned out exceptionally well. Worked for Matty, and I think this would be a good entry way into introducing new vegetables to kids with everything divided up amongst the bowl. Would wax on and on about how filling and fresh tasting this was, but trying to multi-task and watch Orange is New Black and I am totally digging it. That wins. Recipe now.

Mexican Veggie-Rice Bowl
  • Handful greens (I used arugula)
  • Handful brown rice or other grain (I make batches of brown rice and freeze them)
  • Handful chopped raw broccoli
  • Handful drained and rinsed pinto beans from BPA free can
  • Generous spoonful fresh salsa and guacamole (find a great market that makes their own for weeks you are not into whipping up batches of it yourself)
  • juice of a lime
  • olive oil
  • salt and pepper
  1. Add greens, rice, broccoli, pinto beans to a plate or shallow bowl nestled next to each other.
  2. Squeeze lime juice and drizzle olive oil over all that. Salt and pepper.
  3. Scoop guacamole and salsa on top.
  4. If packing for lunch simply pack guac and salsa on the side.
