Mango Kale Chia Seed Smoothie

I rarely record my smoothie recipes – I am always just tossing in an assortment of frozen and fresh veggies and fruit and sometimes it is great, sometimes, not so much.

This one – perfect.  Even my not so psyched about smoothies husband liked it.

This is a great add on to a meal of eggs and toast or cereal. Or a substantial snack. Or with a salad.  I could go on and on but you get the idea…

If your kids are wary of something green…put it in a colored sippy cup or a stainless steel bottle.  And perhaps serve it when they just got home from a fun afternoon of summer craziness.

Mango Kale Chia Seed Smoothie
Ingredients
  • 1 cup fresh or frozen mango (look for the yellow Ataulfo mangoes in your store- they taste like candy!)
  • 1/2 cup fresh or frozen kale (I always keep frozen kale on hand for smoothies)
  • 1 container yogurt (I used Dannon Oikos Vanilla 0% Greek Yogurt – it is delicious!!)
  • 1 Tablespoon chia seeds
  • 1-2 Tablespoons honey
  • unsweetened almond milk – enough to cover ingredients in blender
Instructions
  1. All into a blender. Blend away. Serve.
