Update: A Food52 Wildcard Winner!!! OMG!!! I am insanely excited about this. 

The farmers market had those gorgeous, deep red little strawberries.  Em and Matty are covered in strawberry juice within minutes of getting their hands on them. The season for them seems so fast and then we are back to the boring, tasteless grocery store ones.

I love strawberry shortcake but wanted to make one that I did not feel guilty serving to my kids for breakfast or dinner. This was my answer.  A super fast and easy whole wheat oatmeal biscuit with a lovely dose of vanilla, topped with strawberries and low fat sour cream mixed with brown sugar, vanilla and lemon juice.

If you want 8 or so biscuits, pat the dough about 1/2″ thick.  I have a little square biscuit cutter I use – feel free to just use a knife if you don’t have one.  You can also make the dough a little thicker if you are predisposed to a taller biscuit.

I served this with a mango-kale chia seed smoothie and it was one of those rare dinners where everyone sat down, ate and no one threw a hissy fit over something on their plates.  Small miracle.

P.S. – just to be safe, I served the sauce and strawberries on the side for the kids…

Fast Vanilla Oatmeal Biscuit with Strawberries & Brown Sugar Sour Cream
Biscuits inspired from Cooks Illustrated Best Make Ahead Recipes, Quick Homemade Biscuits p.103. Great recipe to involve the kids in!
Ingredients
  • 2 cups whole wheat pastry flour (spelt flour works well also)
  • 1/2 cup old fashioned oatmeal
  • 2 teaspoons baking powder
  • 1 Tablespoon light brown sugar (or honey)
  • 1/2 teaspoon maldon salt (or kosher)
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/2 cup light brown sugar
  • juice of 1/2 lemon
  • dash vanilla extract
  • pinch maldon or sea salt
  • sliced strawberries
Instructions
  1. Oven to 450. Whisk together flour, baking powder, oatmeal, salt and brown sugar. Add heavy cream and vanilla and mix together. Flour your counter and dump dough onto it. Knead it just until it comes together and absorbs some of the flour from the counter and is not as wet and sticky. Pat about 1/2″ thick and cut into pieces with a knife or biscuit cutter.
  2. Place on parchment lined baking sheet (if you don’t have parchment just spray bottom with cooking spray or smear butter on it). Bake 15 minutes.
  3. While that is baking, slice strawberries and set aside.
  4. Mix sour cream, brown sugar, lemon juice, vanilla and salt in a bowl and stir until combined.
  5. I did not even cut biscuit in half – just topped with strawberries and sour cream brown sugar topping.
