2 minute Pizza

I have been informed numerous times by my nm 1 pickiest eater, my sweet Will, that he would like to just eat pizza and hot dogs. For every meal.  He will make allowances for yogurt and cupcakes.  I really love this greek yogurt pizza dough recipe – http://modernfamilycooking.com/lunch-box-ideas/whole-wheat-greek-yogurt-pizza-crust/ – but alas, no greek yogurt in the house. And we are upon lunch time with nothing ready to go. Little people are getting restless and cranky.  That is kinda scary in my house.

The magic of the broiler saves me again – broiled a healthy oat bran/flax pita for 1 minute plus few seconds until starting to brown – took it out – flipped it over and topped with crushed plum tomatoes and fresh mozzarella – back in for another minute to melt and you have 2 minute pizza.  That the kids loved.

2 minute Pizza
Ingredients
  • whole wheat/whole grain small pita (1 pita a person)
  • plum tomatoes in a jar – I used 1 cup which was 2 tomatoes and additional juices – tear tomatoes apart into small chunks. Was enough for 4 pita’s.
  • garlic salt and dried oregano
  • cheese- whatever you got. I had fresh mozzarella.
  • salt and pepper
Instructions
  1. Broiler to high.
  2. Mix crushed plum tomatoes in a small bowl with sprinkles of garlic salt and dried oregano. Pinch of salt.
  3. On a sheet pan put pita directly under heat (I could do 2 at a time on my sheet). Broil for 1 minute and check if getting browned and stiff. Give few extra seconds (10-15) if not quite there yet.
  4. Remove from oven, flip over so browned side on bottom and spoon and spread a thin layer of tomato sauce. Top with cheese. Back under broiler.
  5. Broil 1 minute and check. Cut and serve.
