4th Birthday Party Picnic & Mexican Layered Dip Recipe


This was the first year the twins were excited for their birthday party.  It is so ironic how some days it feels like a thousand years until bedtime, but somehow 4 amazing years having Will and Emilie in our life has happened in a flash.

We decided to use our community backyard for the party – aka Prospect Park.  I spent several days agonizing over the menu, redoing it in my head a dozen times before I finally settled.

Kid Meals in Chinese Take Out Containers: plain bagel, carrot chips & craisins, homemade apple jello.  Bagel accoutrements provided on side to be added by parent or themselves (cream cheese, strawberry cream cheese, jelly, peanut butter, cashew butter, almond butter)

It may take me a good week to recover from all the work and preparation but it was totally worth it. The food, a lovely selection of beer (chosen by the husband – he is very good at that), and cold brew coffee from our favorite coffee shop kept the adults happy.

Mexican Layered Dip
This makes a very large platter – with perhaps some of the base white dip to spare. Feel free to halve the recipe.
  • 2 – 8oz blocks cream cheese at room temperature
  • 1 lb sour cream
  • 1 container of salsa verde (green salsa) (you can use regular salsa if you like but the green is nice in this)
  • 2 BPA free cans of pinto beans, drained
  • 1 medium onion chopped
  • olive oil and water
  • 8oz pepper jack cheese, shredded
  • 4-5 ripe avocados
  • 2 limes
  • 2 lemons
  • fresh salsa, drained of liquid
  • salt and pepper
  1. Mix together cream cheese, sour cream and salsa verde in a large bowl. It is ok if it is lumpy – mine was and you will be layering on top of this anyway.
  2. In a pan over medium high heat, add little olive oil and then the chopped onion. Saute for a moment until starting to slightly brown and add drained beans, salt and pepper and around 1/4 cup water. Stir to warm everything up for a few minutes and then mash with a potato masher. May need to add more water – you want the consistency to be that of thick mashed potatoes. Salt and pepper it.
  3. Mash up avocados and add juice of lemon and limes, salt and pepper.
  4. On a large platter, spread the cream cheese mixture all the way to the edges. Top with refried beans spread out over top of that. Then spread avocado, top with cheese and drained fresh salsa.
