Oatmeal Yogurt Chia Pancakes

I make pancakes almost every weekend. I am always trying new recipes and at the same time trying to cram as much healthy stuff as possible into them since the kids always crush them.

I literally made this like 30 minutes ago and I immediately came over to the computer to record it, because it is the best tasting, healthy pancake recipe I have made.  I was going to start a juice cleanse thing today and those plans were pushed back to tomorrow once I tasted this.  Fluffy yet hearty, soft and pillowy, an all around great tasting pancake.  The oatmeal/yogurt flavor all melds together to create a delicious, slightly tangy – yet delicate – tasting pancake.

Oatmeal Yogurt Chia Pancakes

This makes a bunch – freeze leftovers for quick weekday breakfast!
Ingredients
  • 1 2/3 cup white whole wheat flour
  • 2/3 cup old fashioned rolled oats
  • 2 Tablespoons light brown sugar
  • 2 Tablespoons ground chia seeds (can use flax or nothing if you don’t have them hanging around)
  • 1 1/4 teaspoon baking powder
  • 1/4 heaping teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup low fat plain yogurt
  • 1 1/2 cups milk – (I used 1% but almond, soy, etc would be lovely also)
  • 4 Tablespoons melted butter
  • 1 Tablespoon vanilla extract
  • 2 large eggs (lightly whisked)
Instructions
  1. Combine all dry ingredients (flour, oats, brown sugar, chia, baking powder and soda and salt) in a large bowl and whisk all together. Make a well in the middle of the bowl and add all the wet ingredients – gently combine until no ribbons of flour are evident. It is a pretty thick batter.
  2. Over medium low heat, in a non stick pan, add some butter or spray with Pam. I use an ice cream scoop to plop them into the pan and cook until lightly browned on one side – flip and cook until same on other.

    Yum!! Where did u get the Chia seeds? Just trying to order these because I saw a Documentary talking about how healthy they are and I can’t find them.

    I am reading Aztec Diet which is based around eating chia seeds- it says they are more bioavailable if ground, so you want to look for ground chia or grind yourself in a coffee/spice grinder. The brands they recommend are Mila which is what they used in their weight loss study – I ordered that from Amazon but they were a bit pricey. The other brands they recommend are Spectrum Essentials Ground Chia Seed, The Chia Seed (thechiaseed.com), Health Warrior (www.store.healthwarrior.com) and Navitas Naturals (www.navitasnaturals.com). Large grocery stores carry Chia, health food stores, Whole Foods, etc. But Amazon was a very easy way to get it with little effort!
