Banana Oat Protein Powder Muffins


I make a lot of muffins – the kids love them, I see it as an opportunity to cram lots of healthy stuff in a small little package, and they are great to throw in their lunch boxes.

I am always trying new recipes looking for the right combination of health and tastiness. I  made a real stinker of a batch earlier in the week that were barely edible.  But this one was a winner.  I judge it by how many muffins are left by noon – out of a dozen, 2 were left.  We all kept coming back for just one more – they were tasty, filling, and didn’t feel like we just consumed a cupcake for breakfast.

If you need to get a chocolate protein powder, I am absolutely devoted to Vega protein powders and their chocolate flavor is excellent.

Banana Oat Protein Powder Muffins

Inspired and modified from this recipe – Cocoa-Banana Muffins,194,157186-253204,00.html
  • 1 1/3 cup whole wheat pastry flour
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/3 cup chocolate protein powder
  • 1 Tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 2 ripe bananas mashed
  • 1/2 cup low fat milk (or almond/soy/rice milk)
  • 6 Tablespoons melted butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup unsweetened cacao chips or nibs (or semisweet chocolate chips)
  1. Oven to 350.
  2. Mix flour through baking soda in a bowl – whisk together. Add rest of ingredients and gently mix until combined.
  3. Spray muffin pan with non stick cooking spray (I used standard size – 12 muffins). I use ice cream scoop to divide the batter up.
  4. Bake 20-25 minutes. Let cool for moment in pan, then dump onto cooling rack to cool.
