Fast Berry Jam with Chia and Honey


My guys are obsessed with the Fage strawberry greek yogurts – especially the strawberry part.  The minute there are no more streaks of red in their yogurt their eating screeches to a halt.  Who can blame them?  The strawberry jelly-like topping is freaking delicious.

However, jacking the kids up on this sugary stuff all day started setting the mommy alarm off.  I wanted to also get away from purchasing all those little containers of yogurt and get the big ones and control the toppings.

I did not expect this little experiment to turn out as fabulous as it did.  Takes just a few minutes of work, uses frozen fruit so you can make it all year round, and it really does firm up like jelly – the chia helps create that jelly like consistency. Besides yogurt I have used it on top of toast and waffles.  It is screaming to be put on top of frozen yogurt.

Fast Berry Jam with Chia and Honey

  • 2 bags frozen organic berries – I used 1 raspberry and 1 strawberry
  • 1 teaspoon cornstarch mixed with 1 teaspoon water until smooth
  • 1 Tablespoon chia seeds
  • 1 Tablespoon honey
  1. Place frozen fruit in pan over medium high heat. Stir frequently – no need to add water but need to stay on top of it.
  2. As the berries start to melt and release their juices, mash the bigger chunks with spoon or fork.
  3. Once fruit appears all broken down, stir in cornstarch, chia and honey. Bring to boil to activate cornstarch then take off heat and let cool.
  4. Store in fridge. Try to resist the urge to top everything with this.
