All it takes is the husband allowing me to go back to sleep for 2 hours and really, nothing can go wrong for the rest of the day.  I was so pleased with the fact I felt semi-human when I got up the second time that I immediately had the urge to make something delicious to start everyone’s day with.  And, since pumpkin is technically a vegetable, I also saw an opportunity to fulfill the kids veggie quotient for the day.

I kinda have a thing for spelt flour.  It exchanges so brilliantly with white flour in recipes that I switch them out without consideration.  However, I know it is not always the easiest to find, so feel free to use whole wheat pastry flour which is pretty much everywhere nowadays.  You can order spelt flour from Amazon if you buy into my spelt craziness…

Pumpkin-Yogurt Chocolate Chip Muffins
one bowl – so fast. If you haven’t tried quinoa flakes, they are a great addition to baked goods for extra nutrition
Ingredients
  • 1 1/2 cup spelt or whole wheat pastry flour
  • 1/4 cup wheat germ or quinoa flakes/ground flax seed/whatever flour you used
  • 1/2 cup sugar,
  • 1 teaspoon each of baking soda and baking powder
  • 1/2 teaspoon salt
  • 1 cup pumpkin
  • 2 eggs
  • 1/2 cup yogurt
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 cup bittersweet chocolate chips
Instructions
  1. Oven to 350. Spray 12 cup muffin pan with cooking spray.
  2. Combine flour through salt and whisk together. In a separate bowl combine pumpkin through vanilla and whisk. Add wet ingredients to dry and combine with a wooden spoon – while there are still flour streaks in the batter, add the chocolate chips and mix until just combined.
  3. Divide amongst muffin cups – I use an ice cream scoop. Bake about 20 minutes- check after 15 minutes and then every 2-3 minutes after that – want top to not be mushy or wet but you want to be careful not to overcook.
  4. Cool in pan on rack for 5 minutes then turn over and they should just tumble out!
