Egg-Avocado-Sriracha Wrap


This is one of my favorite quick breakfast or lunch meals.  There are so many options for healthy tortilla’s out there and I particularly like the La Tortilla Factory brand low carb, high fiber tortilla’s.  I use them constantly and have even won over the little ones with it.

This idea can be a great way to use up little bits of cheese, leftover veggies – anything that you may not have enough of for a full leftover party.  I almost always keep containers of baby spinach in the fridge for salads and this is a great opportunity to get some greens in and also sneak them by the munchkins.

Between the high fiber wrap, protein from the eggs and cheese – it is extremely filling compact little package.

This specific wrap I made for the husband on a weekend – full on man meal with eggs, full fat cheese and big hunks of avocado.   I just had one this morning with the low carb tortilla, an egg white, chipotle laughing cow cheese wedge and 1/4 of an avocado.

Egg-Avocado-Sriracha Wrap


  • Medium size tortilla
  • 2 eggs - cracked in bowl and whisked to combine yolk and white
  • Havarti cheese - 2 slices or 1/2 cup shredded
  • 1/4-1/2 of avocado
  • Sriracha
  • salt and pepper


  1. Warm tortilla in microwave for 10 seconds.
  2. In a nonstick pan over medium-high heat spray some non stick cooking spray and add eggs. Salt and pepper them immediately then let set for a moment until bottom starts cooking and firming up. Flip over as large of chunks as you can - the flatter you can keep this, the easier it is to contain in the wrap.
  3. Once you flipped all the eggs over, turn off heat, evenly distribute the cheese on top and put a lid on to melt.
  4. Slide egg-cheese combination onto wrap, distribute avocado evenly down the middle (sprinkle little salt on avocado), drizzle of sriracha and roll up. Cut in half. Enjoy.
