nut butter-jelly-cream cheese quesadilla


I have been so lucky to meet some amazing moms here in Brooklyn.  I have also met the scary stereotypical brooklyn moms and have gone running for the hills from them.  One mommy friend and I still debate whom picked whom up over a discussion regarding Liberte yogurt at the fancy local market. Another mom and I had a great Romeo and Juliet mommy romance going via our balconies – she lived in the building next door and we could shout at each other from our respective apartments.  She has these gorgeous, sweet twin boys, whom my children are obsessed with.

They recently moved a few blocks away so our R&J days are over, but they have such a rocking new place it is worth it.  We invaded for a playdate yesterday, and since she was hosting the turmoil that is 5 little people in one basement turned fabulous kid play space, I wanted to contribute something by bringing dinner.

My babe Will has also been on a steady, “whatever I eat has to have jelly in it” diet, so with that taken into consideration, I concocted some super fast quesadillas with some really good for you chia seeds thrown in for good measure.  Kids liked them – so did the mommies…

nut butter-jelly-cream cheese quesadilla


  • flour tortilla
  • nut butter of your choice (I used cashew butter)
  • jelly (smuckers all natural concord jelly this round - my stash of bonne maman was getting alarmingly low so I had to keep that for myself)
  • whipped cream cheese
  • chia seeds (or ground flax seeds)


  1. Spread nut butter on one half of tortilla.
  2. Spread cream cheese on other half.
  3. Spoon jelly on top of nut butter.
  4. Sprinkle chia seeds or ground flax seeds over cream cheese.
  5. Fold in half and cut into triangles.

Matty was circling me the entire time I was making them.  He had to give it a quick taste test while I was taking pictures.
